The Hearth

Our wood-burning hearth is the soul of the kitchen. Whole branzino, snapper, and the day’s catch are roasted at high heat: crisp skin, tender flesh, a little smoke from the embers. The fire does the work; we simply guide it. It’s the way the Adriatic has cooked for centuries, and it’s the way we cook today.

Every pasta served at Brodeto is made in-house daily. Squid ink linguine with Carolina shrimp. Hand-rolled pici with slow-cooked pork ragu. Each shape bridges the Italian and Croatian traditions that define Adriatic cooking, dressed simply, with the confidence to let the ingredients lead.

Our wine list is an education in the Adriatic’s underappreciated varietals: Croatian Plavac Mali, Slovenian Rebula, Italian Verdicchio. The bar pours cocktails built on Mediterranean botanicals and Adriatic spirits, balanced and precise. Bottles to discover, classics done right, and a program worth lingering over.

Brodeto is the creation of Chef Scott Crawford, a five-time James Beard Award semifinalist whose career spans some of the most respected kitchens in the American South. After years building Crawford Hospitality into one of Raleigh’s defining restaurant groups, Chef Crawford turned to the Adriatic, the coastal cuisine stretching from Italy’s eastern shore through Croatia, Montenegro, and beyond.

The restaurant takes its name from the traditional fisherman’s stew that varies village to village along the Dalmatian coast. It’s a fitting source for a kitchen built on the premise that great seafood needs little more than fire, salt, and the patience to let it be. Recognized by the MICHELIN Guide in 2025, Brodeto is less about spectacle than about sourcing: the finest from Carolina waters and regional farms, cooked with techniques rooted in centuries of Adriatic tradition.

From the Kitchen

The menu at Brodeto changes with the seasons and the catch. In spring, you might find soft-shell crab with Meyer lemon and capers. Summer brings heirloom tomatoes paired with burrata from a local creamery and torn basil. Fall means wild mushroom risotto finished with aged Parmigiano, and winter calls for hearty seafood stews that honor the brodeto tradition itself, slow-simmered with wine, olive oil, and whatever the fisherman brought in that morning.

Beyond the main courses, the raw bar showcases the best of the Carolina coast: oysters from Stump Sound, tuna crudo with Calabrian chili, and shrimp ceviche with citrus and fennel. The charcuterie program features house-cured salumi alongside imported Croatian and Italian specialties, served with grilled bread from our wood-fired oven.
